A pipe is a transport building used to transport Fluid Products; both liquid and gaseous (with the exception of liquid metals and glass, which are transported by Molten Channel).
In addition to being used as transports, pipes can be used for storage; which is especially useful for storing Fluid Products, that can't be stored in a Fluid Storage [II•III•IV].
Pipes are not destroyed when Buried and seems to be the only structure in the game with this trait (as of Beta 0.4.13). This gives the player the ability to burry pipes under the terrain.
